Harvest Season - Purple Hull Peas

 How time flies! Life has been super busy and it has been a while since I have updated this blog. 

I just re-read the last blog I posted and a bit disappointed. I had high hopes that my daughter would be interested in gardening. Sadly, she isn't the gardening type. But she loves house plants! So maybe not a total failure.

I recently harvested Purple Hull Peas from the garden. For those of you unfamiliar, Purple Hull Peas are from the cow pea family and are delicious. We were introduced to them in Mississippi where they are pretty much a staple. I tried to grow them in Maine with not much luck. They love the heat!


Not only are these peas yummy but their pods make an wonderful jelly! I found this recipe on "Just another Day on the Farm" This jelly is so good! Head over to the website to get your copy.


Purple Pea Pod Jelly

4 C pea hull infusion (see below)
5 C sugar
1 package Sure Jell (or other powdered pectin)
2 T lemon juice

For pea hull infusion: I got 4 cups of liquid from a pound of pea hulls, weighed before removing the peas, of course! Wash empty pea hulls several times; place in a large pot and add water until hulls are just covered. Boil hulls until they are tender and the liquid is a purple color. Strain liquid through damp cheesecloth, a jelly bag, or an old kitchen towel and return it to the pot.

For jelly: Add Sure Jell and lemon juice to the liquid,  Bring to a rolling boil; add sugar and return to a full rolling boil. Boil per the box or until wrinkle tests Remove from heat. Skim off foam. Pour hot jelly into jars. Process them ten min water bath.

Easy Salisbury Steak

Here is one of our family favorites. It is cheap and easy to make. You will need (I used): 2 lbs Deer burger 1 egg 1/4 cup milk 1 box of stuffing mix 3 .87 packets of brown gravy mix (dry) 1. Use a rolling pin to crush stuffing mix in the bag. 2. Mix stuffing mix with egg and milk. 3. Add stuffing mix to burger and mix well. 4. Make small patties. About 14. Place in greased or sprayed baking dish. 5. Bake patties for 14 minutes, turn and bake for another 14 minutes. 6. Mix 3 cups of water with dry gravy mix and pour over patties. 7. Bake for 20 minutes. Serve with mashed potatoes and a veggie.

Spinach Lasagna Rolls

I originally found this recipe here on skinnytaste.com. She gets all the credit. I changed it a bit because the Handsome Man does not like ricotta. Pooh. I When its time to cook this I use a meaty spaghetti sauce.  Spinach Lasagna Rolls Ingredients:   18 lasagna noodles, cooked Approx. 2 cups of freshly chopped spinach (or 10 oz frozen chopped spinach, thawed and completely drained)   2  - 8oz packages of Neufchâtel (or cream cheese) softened   ½ cup cottage cheese 1 cup grated Parmesan cheese   2 egg salt and fresh pepper   ½  cup mozzarella cheese, shredded Combine spinach, Neufchâtel, cottage cheese,  Parmesan , egg, salt and pepper, and mozzarella in a large bowl. If the mixture seems soupy then add more  Parmesan . Make sure the lasagna noodles are dry. Place a piece of wax paper on the counter and lay out the noodles. Spread cheese mixture evenly over noodles.
